Dry Production of Pea Protein Powder
A. Cleaning and Peeling: The harvested peas are first cleaned to remove impurities, then peeled to obtain dehulled peas.
B. Crushing: The dehulled peas are crushed using a graded impact mill with the assistance of a primary induced draft fan. The particle size is controlled through an internal classifier to achieve whole pea powder with a mesh size of 260.
C. Airflow Classification: The crushed pea powder enters an airflow classifier. Light components are discharged through the top outlet and enter a cyclone separator for further separation.
D. Protein Enrichment: The powder is further separated by a grading device into protein-rich components ("rich protein") and starch-rich components.

Wet Production of Pea Protein Powder
A. Cleaning and Soaking: The harvested peas are cleaned to remove impurities, then soaked in water.
B. Beating and Separation: The soaked peas are pulped, and non-protein components such as starch are removed by centrifugation or filtration.
C. Enzymatic Hydrolysis and Hydrothermal Treatment: A combination of enzymatic hydrolysis and continuous hydrothermal treatment is used to produce highly soluble pea protein powder. First, proteins in wastewater are recovered by spray drying. Then, a pea protein solution is prepared and the pH is adjusted. After stirring, enzymes are added, and enzymatic hydrolysis is carried out under controlled temperature conditions.
D. Separation and Concentration: The enzymatic hydrolysate is purified by dialysis, and molecular weight is determined using high-performance liquid chromatography (HPLC), resulting in pea protein with high antioxidant activity.
